Eat now or Eat Later: The Artisan Cashew Nut Brie continues to grow its bloom as it ages. We release the cheese at three weeks. The Brie reaches full maturity at four to six weeks depending on the environment it is kept in. Humidity and temperature affect cheese life. Life span of the Brie is about seven weeks.
Pairings: The Artisan Cashew Nut Brie is a soft, creamy cheese, which means it will go well with a lush, acidic wine, like Chardonnay. Both fresh and dried fruit goes well with Brie. Slightly acidic fruits like apples, grapes, pears, figs, plums and cherries. For dried fruits consider apricots, , raisins and dates. Traditionally, Brie has a salty taste, you could also add unsalted tree nuts such as Pecans and Walnuts. Brie always pairs well with preserve and fruit butters on a cracker or crusty bread.
