Eat now or Eat Later: The Artisan Cashew Nut Brie gets better with age but, there is no reason to wait. Brie matures to around seven weeks depending on the environment. Truly though it peaks in flavor at five weeks. We suggest buying two 6oz wheels, one to eat now and one to let ripen.
Pairings: The Artisan Cashew Nut Brie is a soft, creamy cheese, which means it will go well with a lush, acidic wine, like Chardonnay. Both fresh and dried fruit goes well with Brie. Slightly acidic fruits like apples, grapes, pears, figs, plums and cherries. For dried fruits consider apricots, , raisins and dates. Traditionally, Brie has a salty taste, you could also add unsalted tree nuts such as Pecans and Walnuts. And of course Brie always paris well with preserve and fruit butters on a cracker or crusty bread.
